But mayonnaise has a more complicated relationship with food safety than its creamy appearance suggests.

Commercial mayonnaise is formulated to be relatively stable, thanks in part to ingredients such as pasteurized eggs and acidic components. That does not mean it can be treated like an ordinary shelf-stable pantry product once the jar has been opened.
